Charlie Brown’s Favorite Snack: The Great Pumpkin Energy Bars.

Charlie Brown was no dummy in waiting up all night for the Great Pumpkin: pumpkins are a nutritional powerhouse. High in fiber, low on the glycemic index, and bursting with Vitamin A to keep your rods healthy (that’d be the ones in your eyes, used for night vision!) Make these bars to bring along on any outing and incorporate pump up the pumpkin your diet.

Mix the following dry ingredients together:
¼ cup roasted pumpkin seeds (pepitas)
¼ cup walnuts, finely chopped
1/4 cup dried cranberries
3 cups quick oats
½ cup whole wheat flour
¾ cup wheat germ
2-3 T protein powder
½ tsp  sea salt
1t each: cinnamon, ginger, allspice, nutmeg

Mix the following wet ingredients, then add to the dry mixture:
1 cup honey
1/2 cup pumpkin puree
1/4 cup peanut butter

Use a melon baller to scoop portions of the mixture onto a cookie sheet,
Bake at 350 for 12 minutes. Cool thoroughly on rack before storing in fridge.
